FOOD Central American cuisine. The cuisine in Costa Rica and Nicaragua is a fusion cuisine that combines elements of culinary traditions from Africa, Italy, France, China, and Spain. You will have the chance to sample everything from casado dinners (white rice, beans, pork, steak or chicken, and the region's renowned fried plantains), to the Caribbean-influenced curries and delicious coastal seafood dishes such as ceviche.
Home-style cooking dominates, so no Central American adventure tour would be complete without at least one heaping forkful of the Gallo Pinto (rice and beans seasoned with coriander, onions and Worcestershire sauce). Vegetarians will be well catered for thanks to an abundance of fresh vegetables and fruits, and those who prefer more Western-influenced food will find that there are generally Western dishes available.
